Zucchini stuffed with meat

Gratin stuffed zucchini

Ingredients:

  • 4 medium zucchinis
  • 300 g of ground beef
  • Medium onion: 1 unit
  • Red pepper: 1 unit
  • Garlic cloves: 1 unit
  • 2 eggs
  • 4 spoons of breadcrumbs
  • 50 g of grated parmesan cheese
  • Extra virgin olive oil
  • Salt, pepper, oregano and parsley (to taste)

Method of preparation:

  1. First, wash the zucchinis and bring them to a boil in a large pot with plenty of water.
  2. Once the zucchinis begin to soften (about 10 minutes of boiling), remove them from the pan and let them cool.
  3. On the other hand, cut the zucchinis in half, lengthwise. With the help of a spoon, scrape the inside carefully so as not to cut or pierce the bark. Mash the pulp with a fork and set aside.
  4. Then, in a hot skillet, put a little olive oil, onion, garlic and pepper, finely chopped. Saute for five minutes until ingredients are very tender.
  5. Also, add the minced meat, season and cook until the meat has released all its juice. Add the zucchini pulp, a spoon of Parmesan cheese, the two eggs, oregano, parsley and breadcrumbs. Stir well and remove from heat.

  • 4 medium zucchinis
  • 6 slices of ham
  • 200 g of grated gruyere cheese
  • 50 g of butter
  • 1 onion
  • Thyme and rosemary
  • Salt and pepper to taste

Method of preparation:

  1. First, repeat steps 1, 2 and 3 from the previous recipe. If the zucchinis are too large, instead of cutting them lengthways, you can also cut into 4 inch cylinders.
  2. Afterwards, chop the onion very fine and sauté in a hot skillet with butter.
  3. Also, add the zucchini pulp and the ham.
  4. On the other hand, mix everything, season with salt, pepper and spices.
  5. Then, fill the zucchini with this mixture and cover with the grated cheese.
  6. Finally, place in the oven and brown for approximately 30 minutes.

  • 4 zucchinis
  • 1 medium onion
  • 500 g of sliced ​​mushrooms
  • 1 eggplant
  • Red pepper: 1 unit
  • 1 cup cooked white rice
  • 200 g of grated gruyere cheese
  • White wine
  • Olive oil, salt, pepper and parsley (to taste).

Method of preparation:

  1. First, repeat steps 1, 2 and 3 of the first recipe.
  2. Then, in a skillet heated with olive oil, saute the onion until transparent. Add the pepper, eggplant, zucchini pulp, rice and mushroom slices. Season with salt and pepper.
  3. Thereafter, cook for five minutes.
  4. Also, add a little white wine and let it cook for a few more minutes. Finish with the parsley.
