Boiled ribs with potatoes are one of those delicious, easy and quick recipes to prepare. They are ideal for a last-minute dinner with friends, or for everyday life when you don’t have a lot of time to cook.

This traditional dish is perfect for winter, but you can prepare it all year round. Next, we’ll look at  some ideas for preparing a simple recipe for cooked ribs with potatoes.

The main thing is to choose the meat well

The ingredients in this stew are simple and the unquestionable protagonist is the pork ribs, which is why it  is important to choose very meaty ribs.  An option that adds even more flavor to the dish is to choose the Iberian pork ribs.

You can also buy whole ribs.  In that case, you need to separate them with a very sharp knife. The task may seem difficult, but in reality it is not. You just need to have a little patience.

The importance of seasoning

It is very important to season the ribs and store them for more than two hours. This way, the meat will reach the desired flavor and, when cooked, the result will be a dish with a lot of flavor. In this sense, the ideal is to leave the ribs generously spread with the marinade throughout the night, but after a few hours you will also have a certain flavor. Of course, it will all depend on the time you have available.

To marinate the ribs, beat in a food processor: onion, garlic, cumin, salt, pepper, dried oregano and a dash of oil. Once the mixture has acquired a pasty consistency, rub the ribs with it. This step must be done carefully to cover all sides. Season the rib in a covered container (you can also use plastic wrap).

Delicious ribs cooked with potatoes

Ingredients

  • 3 cloves of garlic.
  • 6 potatoes (400 g).
  • 1 red pepper (30 g).
  • 1 green pepper (30 g).
  • Salt, pepper and oil.
  • 1 kg of chopped pork ribs.
  • 2 small or medium onions (50 g).
  • 2 teaspoons of sweet paprika (10 g).
  • 1.5 liters of homemade beef broth (prepared boiled with bones and water or pieces of meat, onion, celery and carrots for 30 or 40 minutes).

Preparation

  1. Finely chop the peppers, onion and garlic. 
  2. Peel and cut the potatoes into pieces. Reserve in cold water.
  3. In a wide saucepan, place the oil. When hot, brown the ribs on all sides. 
  4. In the same oil, brown the peppers, onion and garlic for about five minutes.
  5. Add ribs and potatoes.
  6. Season and add the paprika.
  7. Cover with the broth (add water if necessary).
  8. Bring to a boil and cook over medium heat for about 30 minutes.
  9. Serve and enjoy these delicious ribs cooked with potatoes.

Ribs cooked with white wine

This is a slightly different version of the traditional recipe. In addition to the basic ingredients, we will add tomatoes, carrots and white wine.  It’s also delicious and very easy to prepare.

White wine

Ingredients

  • 1 onion (30 g).
  • 6 potatoes (400 g).
  • 1 carrot (20 g).
  • 1 tomato (30 g).
  • 3 cloves of garlic
  • Olive oil (to taste).
  • 1 kg of pork rib
  • 1 red or green pepper (30 g).
  • 1 glass of white wine (200 ml)
  • Bay, salt and pepper (to taste).

Preparation

  1. Chop the onion, garlic, pepper and carrots.
  2. Peel the tomatoes and cut into small cubes.
  3. Put a little oil in a pan and, when it is hot, add the onion and garlic. Let it brown for 2 or 3 minutes.
  4. Then add pepper and carrots. Continue browning for another 2 or 3 minutes.
  5. Add tomatoes and stir. If there is excess acidity, you can add a little sugar.
  6. Add the chopped ribs, stir a few minutes and wash with the white wine glass.
  7. Leave on high heat until the alcohol evaporates (approximately 2 minutes).
  8. Season with salt and add a little water (as needed to cover the preparation).
  9. Add the bay leaf and bring to a boil. Lower the heat and cover.
  10. Cook for about 30 minutes.
  11. Meanwhile, peel and cut the potatoes into pieces.
  12. Once this time has elapsed, add the potatoes and cook for another 15 minutes. Add some water if necessary.
  13. Serve and enjoy!
