There are many exquisite dishes that can be prepared with rice. One of the best known is the creamy risotto, which we will comment on below. Simple but with an exquisite taste. Furthermore, its soft texture is very easy to assimilate.

The secret of a good risotto is to achieve a creamy texture while cooking. Therefore,  we must add the liquid in an adequate amount  and allow it to reduce to its correct measure, according to the amount of rice used.

Of course,  there are a lot of different recipes  for making a good risotto. In them we can find combinations with shrimp, broccoli, asparagus, chicken… Definitely almost any element we can imagine.

This delicious dish is a good option for those looking to prepare something different without leaving the concept of healthy eating. Its main ingredients, rice and mushrooms, contain nutrients beneficial to health.

According to a study published in the journal  Antioxidants , rice, mainly in its whole variety, is a source of phytochemicals, such as dietary fiber, functional lipids, essential amino acids, phytosterols, phenolic acids, flavonoids, anthocyanins, among others.

On the other hand, according to data published in the United States Department of Agriculture (USDA) , mushrooms contain nutrients such as copper, potassium, folic acid and niacin.

Among other things, it should be noted that the recipe contains other healthy vegetables such as onion, garlic and parsley. What do you think about preparing it at home?

Ingredients

  • Salt (to taste).
  • 1 onion (30 g).
  • 2 garlic cloves.
  • 3 cups of rice (300 g).
  • Parsley or basil (to taste).
  • Olive oil (to taste)
  • 1 glass of white wine (250 ml).
  • 8 tablespoons of butter (80 g).
  • 4 cups of vegetable broth (1 liter).
  • 3 cups of chopped mushrooms (300 g).
  • 8 tablespoons of grated Parmesan cheese (80 g).

As a separate option, we can add poached eggs to this risotto recipe. For this, we will need the following ingredients:

  • Salt.
  • Parsley.
  • 1 egg (60 g).
  • Water (sufficient amount).
  • 3 teaspoons of vinegar (15 ml).

Preparation of creamy risotto

First round preparation

  • First, grate or chop the onion and garlic into small pieces and cook over medium heat with butter or olive oil,  without browning.
  • Add the well-washed mushrooms, cut into cubes or slices, and cook until all of their water has been released.
  • Then  lightly salt the mixture. If you like, save a few slices of mushrooms to decorate each dish, plus some parsley or basil.
  • After that, add the rice, mixing it well with the rest of the ingredients without roasting. Add the wine so that the grain does not break on the outside and that it becomes hard inside, and let it evaporate completely.
  • With the broth prepared and very hot, and watching the point of salt (since evaporation increases the concentration of salt), reduce the heat and, with a ladle, add the right amount to cover the rice.
  • Stir gently with regularity – it doesn’t have to be continuous – with a wooden spoon while the broth is reduced.

Preparation of the second round

  • Once the first batch has evaporated, add the proportion of broth needed to cover the rice and continue stirring regularly.
  • Repeat the process for the 25 to 30 minutes that cooking usually takes, although the time depends on the type of rice used.
  • When it starts to look velvety and creamy, try the rice and turn off the heat when you think it is ‘al dente’ (soft on the outside and with the ideal hardness on the inside).
  • Add the rest of the butter, spread the grated Parmesan, and  stir well to mix. Test the salt if necessary, cover the pan and let it stand for a few minutes.

Note: there are people who want a little more creaminess and add a portion of cream at the end, but the Italians consider this action a sin, since starch is what brings the creaminess of rice.

Variant with poached eggs

A well-known option is that of Spanish chef Karlos Arguiñano, who adds a poached egg to each dish. To do this, drop an egg into boiling water with parsley, salt and a little vinegar over medium heat. Then  let it cook for about 3 or 4 minutes.

Finally, if you want to make a decorative dish like the great chefs and don’t know how, cut a rim from a water bottle to the height you consider necessary and use it as a mold. If, on the other hand, you prefer a more rustic style, you  can serve the creamy risotto in an earthenware bowl.
