1. Soybean Nugget

Perhaps the first thing that comes to your mind when you think of the word “vegetarian” is vegetables, vegetables and salads. However, this recipe leaves nothing to be desired compared to the original nuggets ; they are even more delicious and nutritious.

Ingredients

  • ½ cup soy meat (100 g)
  • ½ glass of water (100 ml)
  • ¼ cup of soy sauce (50 ml)
  • 4 drops of tabasco
  • 1 egg
  • 1 tablespoon of salt (15 g)
  • ½ tablespoon of pepper (7 g)
  • ½ cup of bread crumbs (100 g)
  • 3 tablespoons of oil (45 ml)

Preparation

  1. First, take a bowl and mix the soy meat with tabasco and soy sauce. Let the ingredients sit for 15 minutes.
  2. Then, in another bowl, mix the egg with salt and pepper and include in the previous preparation. Finally, add the bread crumb and knead until you get a more or less solid mixture that you can handle.
  3. Then, shape the nuggets : first, make little balls with the dough and then crush them. Place them on a tray.
  4. Finally, heat a pan with the oil and  fry your veggie nuggets until golden  on both sides. Serve and enjoy.

2. Broccoli nuggets

Broccoli is a plant with countless beneficial properties for our body.  It is rich in vitamin C and E, and contains soluble dietary fiber. It also helps to prevent different diseases.

Ingredients

  • 1 carrot
  • 2 potatoes
  • 1 beet
  • 1 cup of broccoli (100 g)
  • ½ green pepper
  • 1 tablespoon of olive oil (15 ml)
  • ½ tablespoon of salt (7 g)
  • ½ tablespoon of pepper (7 g)
  • 1 cup of bread crumbs (200 g)
  • 2 eggs
  • 4 tablespoons of oil (60 ml)

Preparation

  1. The first thing you should do is cut all the vegetables and greens except the peppers. Bring them to a boil for 10 or 15 minutes until they soften.
  2. Then place them in a bowl and crush them to form a dough.
  3. Then add pepper, salt, pepper and oil. Knead well so that your ingredients are well integrated.
  4. Afterwards, store this mixture in the refrigerator so that it stabilizes and hardens a little. Approximately 15 or 20 minutes.

Ingredients

  • 1 cup of cauliflower (150 g)
  • ¼ cup of parmesan cheese (50 g)
  • 1 cup of broccoli (150 g)
  • 2 eggs
  • 1 cup of bread crumbs (150 g)
  • 2 tablespoons of olive oil (30 ml)
  • 1 tablespoon of salt (15 g)
  • 1 teaspoon of pepper (5 g)

Preparation

  1. To start,  boil the cauliflower and broccoli over medium heat until tender.
  2. Then place the vegetables in a food processor along with the rest of the ingredients. Add them one by one so they integrate well.
  3. Afterwards, form some balls with the obtained dough and continue making your vegetarian nuggets . Place them on a greased baking sheet.
  4. Finally, bake for 20 minutes, at about 180ºC, until golden. Let it cool, serve and  enjoy a delicious vegetarian dish.
